Has anyone created a PDF Template where a field can flow to a second page if needed? I have a need where the selected data may fit on one page but may also need to run to a second page.

If you do not require complex formatting, using the PDF from DOCX smart service is another option. This would involve creating a docx template file with merge tags and freemarker code for data insertion
