Is there a way I can call an expression rule inside a process model and save different values from the expression rule output to the pv! variables for further use.

In the script node output, you can call your expression rule by using rule![your_rule_Name} in expression mode. In the target use the variable in which you want to save the value.
I really don't mean to seem dismissive, but this is pretty standard / basic functionality. Out of curiosity, did you complete the online training courses? If not, they should provide you much of this information.
