Currently I am using appian provided Document extraction AI skills. While running the process it is taking approx 3~5 min for document extraction from a high resolution pdf.
How can we improve the performance of the AI skill, any thoughts?

It's a brand new feature. I expect they will be refning it as time passes. Before then I'm not sure there's much you can do yourself to improve the performance, apart from ensuring that the PDFs provided to it are more on the simple side if possible.

Reduce the resolution or complexity of the PDFs using secure tool. Simplifying the document's layout and minimizing unnecessary high-resolution images could decrease processing time.
Since this is a relatively new feature, providing feedback to Appian about performance issues can help them prioritize improvements in future updates.
