We have designed a process model in order update Appian profile(Time zone settings) through tempo.
After update, profile gets saved and then reverting back to original values after sometime (may be after 3 to 4 days) without any user intervention.

Could please suggest us why its happening?

I would suggest you review the clustering configuration of your multiple application servers. The Appian Technical Support Team can also work with you to troubleshoot this further since it requires access to configuration files.
