How do I turn off the email notification that is generated when a task is assign

You can use Portal Utilities smart service (available in shared components) to disable or enable alerts. Please remember that alert type for a task assigned to single user (assigned to you) and assigned to multiple users (assigned to you and others) is different. So you need to disable both if you want to avoid all assignment alerts.
