We are trying to extract the Appian Health Check report for the period 8 AM to 3 PM 13th May 2019.
Any help on the procedure to extract this data would be highly appreciated, thank you.

Pretty sure you can't set the analysis window to this level of granularity. Since the AHC is simply digesting the values it's finding in the logs (and the primary database) then perhaps you can find what you're looking for in the logs?
Can you share some information about why you need information for that time period? Is there an error you encountered during that time or do you need to audit information?
