How do I change the default value of a user input node from its default value to a different value when the task alert is sent. i.e. From "Normal" to "High". I used an escalation and it changed it another based on a radio button selection in the start form. But the alert message stayed to what the default setting was on the task....

have you looked into task property called priority (tp!priority)?
You should be able to build your expression for the default value based on this. Remember to check the box in the 'Other' tab of the Form that says 'Refresh default values every time the form is viewed'
