Should a "timer event" setup in a task get cancelled (or not triggered) if the process gets to the end event before an escalation date?...

The trigger on a task gets cancelled when the task state is changed to completed or skipped/cancelled. So yes, when the "end" event of the process is reached and a task is still active, the timer should not trigger. This is assuming that there are no other flows active in the process that could keep the task active. More on timers/triggers -

So yes, when the "end" event of the process is reached and a task is still active, the timer should not trigger.
