On User login to the Portal, how do we keep one specific application as default. Currently it is showing the default home page - My requirement is to load "Application X" and all its pages to which that particular user is authorized to when he logins....

Only one application can be set as the default and the steps are:
1. Login to /suite/designer
2. Click on the checkbox on the left side of the application name
3. The toolbar will now display a button: "Make default application" click there

Sorry phrased my question wrong - not the portal, but when the end user logins to the application portal, his default application should load up. Means instead of him bein presented with "Welcome", "My Profile", "My Bookmarks" etc, application specific tabs should be loaded.

The behavior you are seeing is indeed because the HOME application is set as the default out of the box in Appian

Ok, but how do we handle it when there are multiple applications being developed which cater to different user groups. We can only have one default application

Correct just one default application.
You could create a generic one with a single page with links to the specific applications, like a landing page or menu. If you use Targeted Channels each set of links will only be available to the specific groups.
