I would like to set up a task in the following way:
1) Initially the task will be assigned to a group of users, who will each be able to see the task in their My Task view.
2) Exactly one user from this group will be able to accept the task.
3) After one user accepts the task, no other user will be able to accept it. However, the task should still be visible in read-only mode in their inbox unless it is re-assigned to them.
Can this be done in Appian, and if so, what would be the best approach to this problem?...

This is how tasks assigned to Groups work by default, except for the task being visible in read-only mode to others.
What is the use case for users having items in their task list that they can't actually work on? If the goal is to provide a way for users to access data about an object, I recommend using Records instead.
