We would like to build a date picker with two calendar controls like the picture below so that a user can select a date range and if possible the date range selection should be highlighted.
Can this be done?

This isn't possible with out-of-the-box (OOTB) functionality. I would just create 2 date picker fields that are either vertical or adjacent to each other; one with a 'From' label and the other 'To'. To ensure the date range is valid, you'll have to add validation for the supplied dates so the 'To' date is not before the 'From' date.
