I am trying to populate a grid using a default value and am facing an issue. The default value and "save into" are both CDT's of the same type. If I give the save into value for a column in the grid, the default value for that column disappears. This happening for columns of type “text”. What could be wrong here?...

It is only the text box columns which have this issue. I have others columns in the same grid(checkboxes) which takes a default value from the same CDT and saves into another CDT of the same type and they work without issues

Thank you for bringing this to our attention. The reference number for this issue is AN-40978.
As a workaround:
1. Map your column to a text (multiple) node input let's say accountTypeCd
2. Create a custom output to map that node output to the right pv, for instance make the expression:
=ac!accountTypeCd
3. Map the custom output to the right pv using the "store as" operator
=pv!pkAccSecList.accountType.accountTypeCd
Here's an example:

Ok. I tried the workaround - able to save now, but when I delete a row and come back to the same page, an empty row gets added at the bottom. I tried gettting the value of the elements in the grid into a temp CDT, null the original CDT, and then assign the temp CDT to the original CDT, but still the empty rows show up
