Hello ! currently by using a!documentViewerField() we would be able to view the document in Appian UI in read Only format.
In Appian, is there any option to edit the document from UI and store it in KC ? Any suggestions please ?

If possible please try using a!webContentField() and you could provide access to a Google Doc . Refer the below link for the same suggestion.
Also upon successful update, should have integration to bring the latest document back to appian KC.
Thanks Barat ! In this approach, as we need to push the document to Google doc first and after the update we need to pull back the document again to KC. With out any integration, do you think there is a way to edit the document in Appian itself ?
No. Appian does not support document manipulation OOTB.

My experience with embedding things like this is not good. There is no interaction between the embedded content and the Appian UI. If you need this, I would go the way of creating a component plugin.
For connecting to Google docs, create a connected system/intergrations or check the appmarket.
