I want to hide the out of the box Reassign button which shows to user when they open any Appian process based task. Is it really feasible?

You just want to hide it or you want to remove the privilege itself. If you don't want user to reassign a task go to Assignment tab where you can find set re-assignment privileges set privilege to No Privilege. If you just want to hide , I don't think we can do that.
First you have to set the reassignment privileges to no privilege. This will hide the reassign button. But again if the user is a part of admin group, that reassign button will still show
"Admin group" here means the admin, editor or manager security role on the process model.
Make sure the task assignee should not have "Manager" or above right of the process instance to remove reassignment privileges.
We have not used manager or editor permissions in our project. So I am referring to the administrator group here. But the documentation says its applicable for manager, editor groups as well. Pardon my statement that I mentioned only admin group.
