Is there default behavior for when a user refreshes a page in the middle of a process within an interface?

Nothing will happen. The page will refresh.
The page and the related variables will be refreshed as expected...

If you do a browser refresh, the user will likely lose any progress they have made on that task. For instance, if they had saved some data on a form, that data will not be retained on browser refresh. There will also be a warning message that will show when you attempt to refresh though that mentions that your changes may not be saved.
