The "web content with dynamic data" channel when placed on a page allows for configuring of process model or instance context, but when opening the expression editor the process context process variables are not available. How do I put process variables in this channel expression when the variables are not available to select? ...

If I have understood it right, you are trying to do this set up on a standalone page and not a process dashboard. Typically, when you want to show process data you may want to create a custom process dashboard for the process, such that the process variables will be available to select in the web content with dynamic data channel. However, if you still want to use only the standalone page approach, try directly typing out the process variable name prefixed with pv! in the editor
