Email Template: In an Send Email node you have the ability to pick a text/html

Unfortunately that is not a built-in option. The template must be selected in the process modeler so that you Appian can read the template and provide you the substitution grid. If there aren't too many template options, one way around this would be to set up each send email node and then use an XOR gateway to choose which template/node to use.
