Email Template: In an Send Email node you have the ability to pick a text/html

Email Template: In an Send Email node you have the ability to pick a text/html template from a knowledge center. Is it possible to set the template to be used via the document id of that template? For example, I could based on a notification type retrieve a document id from a database that would depict the template

Unfortunately that is not a built-in option. The template must be selected in the process modeler so that you Appian can read the template and provide you the substitution grid. Live processes cannot dynamically select new templates. Relevant documentation: forum.appian.com/.../Send_Email_Smart_Service.html
