Email alerts are being received with some special characters ???. Snippets attached show the same.
Issue is being faced only in one environment and nothing has been changed in the exception-type-config-process.xml under <APPIAN_HOME>/ear/suite.ear/web.war/WEB-INF/conf/process

Any pointers are appreciated.

You're missing several encoding settings. Please make sure to add the settings from forum.appian.com/.../Configuring_WebLogic.html and restart Weblogic.
