Change Document Extension

There might be an extension that grants this functionality, though I'd have to double check.

Keep in mind, though, that unless you've done something special with your .xlsx file, it won't open like a CSV because its contents will not actually resemble that of a .csv at all. Simply changing the extension under normal circumstances won't change the contents.
