I am using the CDT to excel plugin from Excel Tools and I am noticing that every time the process runs, the data is getting written into the excel template. Why is this happening?

Please check which version of the plug-in you're running - an older version of the plug-in had a known issue where generated documents were overwriting the template. Subsequent versions (before the node was deprecated) fixed this issue.
