We are planning to build full paper stich functionality in Appian. Does anyone know if Appian supports Kofax or Adobe Pro Plug-Ins?

Not sure what you mean with "supports Kofax or Adobe Pro Plug-Ins" ?!?
You can create Java plugins as well as HTML/JS plugins to add additional functionalities. And whether this can be done, depends on these plugins.
