When a group of users is assigned a task and one of the users selects the task the other users receive an error “An error was encountered while processing your request. Please try again.” When trying to accept the task. Is that a known issue or do we have some configuration set up incorrectly to catch these errors?...

Actually Appian shows a pink pop-up with a more informative message (see attached screenshot) if you're seeing a generic browser pop-up with the message "An error was encountered while processing your request. Please try again." then there's a configuration change you need to do at the IIS level (assuming that is the web server you're using)
To fix this:
1. Click on your IIS Site -> Error Pages -> Edit Feature Settings -> Select "Detailed Errors" only
2. Disable the custom error pages IIS Site -> .NET Error Pages -> Edit Feature Settings -> Off
The technical details on why this is needed have been shared with your team in the support case.
