Is there any way to get back a 'saved' process model (Saved was more recent that Published) that appears to have been overwritten by a run of Impact Analysis (from System tab>Data Management>Data Types)....

Don't think so. Unless the model is published or saved as a new version, a new save overwrites the earlier save.
