How can a workflow be configured to allow for alternates to be set to route task

How can a workflow be configured to allow for alternates to be set to route tasks in the event someone is out of office, similar to how other products can forward emails and such. We know we could simply put two (or more) people in a group, but that sets up the chance that neither will complete the task. We also know we can set an escalation, but in the case where someone is simply going out on vacation, an escalation does not make sense.

    We usually have a single process model for delegation between 2 users that we always plug in when we have Annual Leave functionality, which basically reassigns all tasks from 1 user to the other for a particular date range.

    It takes anything between 2 to 6 hours to develop, so it's pretty straight-forward, I am attaching a screenshot of the design.
