How can a workflow be configured to allow for alternates to be set to route task

How can a workflow be configured to allow for alternates to be set to route tasks in the event someone is out of office, similar to how other products can forward emails and such. We know we could simply put two (or more) people in a group, but that sets up the chance that neither will complete the task. We also know we can set an escalation, but in the case where someone is simply going out on vacation, an escalation does not make sense.

@robinm An other post at https://forum.appian.com/suite/tempo/entry/e-157995 which has a solution and it might be worth taking a look at the points mentioned by me there (such as OOTB Reassign Task, Portal Report's Reassign etc) which could break the functionality of 'Out of office' process.
