Hi all,
Does anyone know if loggedInUser() can pick up the wrong logged in user - not Adminstrator, just someone else - when starting a quicktask?

Depending on how you're using this loggedInUser value, could you use the Process Initiator value in the sub-process to get who started it off the quick task?

Potentially, yes. But currently I'm trying to work out if this case is even possible so I can feed back to one of our clients about this.

I think that is the problem, on the node setup. There isn't a way to get the loggedInUser. You need to have that expression done on the form, otherwise the process won't know who is the loggedInUser. So if you had a read-only field that just displays the loggedInUser, then I think it should get passed into your sub-process.
