Does a!queryEntity() returns the entity type I am querying to the database? For instance, if on the entity parameter of the queryEntity() function I pass a Student type, will it return a Student?

It returns datasubset similar to resultset in JAVA. It will only has the columns you have in selection. These columns are from that CDT so you can map it to the CDT but the key again is, it will only have the columns you selected not all columns.
For instance:
local!datasubset: <queryEntity>,
local!datasubset.data will have the columns you selected. data will have null if there are no results. And there's something called totalCount which has the number of results.
