We are using Appian DocCenter for document extractions, mainly pdfs. 
 Sometimes for few pdfs preview is not appearing. But data is getting extracted fine. Did anyone faced this issue.

Raise a support ticket with Appian - since it's affecting all users across all browsers with normal PDFs, it needs to be investigated.

I have seen this when environments are slow document Preview is slow to load. So check the system health if something is causing slowness in general.

 Are those image-based/scanned PDFs? Preview uses native browser rendering check your browser cache, plugin, extension properly.
