How to extract data from email using Email Classification AI

Hi,
How to extract data from email using Email Classification AI, I have created Email Classification AI Skill , and provided some sample emails , on using the "Classify Emails smart service" its only returns some prediction of the email type. 
Can anyone please help to guide what to do with the prediction of the email type, as I was looking more towards extracting the data from email using AI ML Email Classification.

Same goes for Document Classification AI Skill, basically I want to understand what is the practical use of it?

Email Classification AI and Document Classification AI skills are designed for categorization, not direct data extraction. However, you can leverage the predicted email type to guide further processing and potentially extract relevant data.
