I am new in Appian, we are setup to use SSO to log in Appian, when users are created, it send wrong informations to the users. Is it possible toi disable the automatic email sent when creating a new user?

I suggest to open a support case to clarify that.
How are you creating users? Through process, or through the admin console?
If through process, in the Create User smart serivce, set Send Account Creation Email to false. https://docs.appian.com/suite/help/24.1/Add_User_Smart_Service.html
If Admin Console, one "trick" that you can use is put in a very complex and randomized value into the password field - if that field has a value, an email won't be sent. Once the user is put into an SSO group, they can never use that password to login.
I'm not aware of any server side properties that allow you turn just this email off.
