Using the out of the box Call Web Service node, is there a setting to have the web service call go through a proxy?...

You can use a proxy WSDL with a proxy end-point as the dynamic WSDL URL while configuring Web Service SmartService. At runtime, the web service invocation will use this runtime WSDL and thus route the call through a proxy (via your proxy server). Does that answer your question?
