changing email smart service sender email

the relevant link is Send E-Mail Smart Service - Appian 25.2. Whenever I add a new instance of this smart service I get an additional From option of format Appian <Client> <environment type>. I am trying to find out where the associated email address is stored, so it can be changed. Thanks
